My mom has a serious green thumb. Every summer I look forward to the different variety of vegetables that she decides to grow, knowing that my taste buds will surely benefit. This year, her garden has produced a bounty of green beans, the cutest little cucumbers, eggplant, bell peppers, and tomatoes.
To use up all of the green beans, I made a red potato and green bean salad with toasted pecans and blue cheese. It got a definite thumbs up! Recipe found at the lovely Farmhouse Delivery blog. Their website is a constant source of photography and recipe inspiration.
